A Warming Soup Recipe

If any of you were lucky enough to have lunch at the recent Farm to School Workshop in Island City, then you know how flavorful and satisfying this soup is! Try Andrea Malmerg's Potato, Cheese and Roasted Green Chili Bisque.

A Warming Soup Recipe

Potatoes

We are going to be posting more recipes on our website.  Hopefully we will be able to provide inspiration through the seasons.  This recipe is a nice winter recipe....I figured that since it has been snowing lately, it wouldn't be inappropriate to post  it today.  If you have any early spring recipes you would like to share, please contact us!

 

Potato, Cheese and Roasted Green Chili Bisque

1/4 cup butter

1 medium onion, chopped

4 cloves garlic, crushed

6 cups chicken broth

6 medium potatoes, cut in 1/2" cubes

1 1/2 tsp. ground cumin

I tsp. salt

2 cups grated medium cheddar cheese

2 cups milk

3/4 cup diced green chilies

 

In a soup pot, sauté the onions and garlic in the butter until soft over medium-high heat. 

Add the broth, potatoes, cumin, salt, and pepper. Cover the soup pot and simmer over medium-low heat for 25-30 minutes, until potatoes and falling apart.

Add cumin, salt, cheddar cheese, milk, and chilies.

Heat for a few minutes and serve.

This soup does not reheat well.

I can honestly say that this was a very tasty soup!!! Thanks for posting the recipe! And a big thanks to the Lewis' for donating the local potatoes (organic!!) that made this recipe extra special... yumm...

This is great to have recipes showing up. .I hear there will be lots of Spinach for the beginning markets, who has great spinach recipes for the upcoming abundance!
